Lemon Pepper Chicken recipe by Keencuisinier

I am following low carbs high fat diet since 14 days and have lost 7 pounds by eating more fats, moderate protein and low carbs. This is the only diet that I am enjoying and actually look forward to my meals. I am a kind of person who needs variations in my meals to break the monotony. I cannot keep on eating stir fry, eggs, fish all the time. I needed chicken, so I came up with this zesty lemon pepper chicken recipe. I used halal chicken tights as they are high in fats which suited my dietary requirements. You…

    Tomato Saar

Tomato Saar is a sweet & tangy Indian soup recipe made using tomatoes and coconut milk. This warming, comforting and tasty soup makes a perfect side with rice. Tomato Saar is nothing but a popular Maharashtrian version of tomato soup. This mildly spiced soup is traditionally served with steamed rice or Masale Bhaat. Maharashtrian thali is incomplete without this soup. I have grown up having Saar bhaat as my favorite meal and still do. Today I am sharing with you my family recipe to this tomato coconut soup, which is a prefect balance of tanginess from the tomatoes and the…

  • Vangyache Bharit / Smoked Eggplant

    May 25, 2020Niketa

Vangyache bharit is an extremely popular Maharashtrian recipe cooked using fire roasted eggplant/ aubergine. Basically I would say, it is an Indian equivalent of baba ganoush made using slight different ingredients but gives the same appearance. There are many variations to this recipe but my personal favorite is the one made using  yogurt.  This recipe is quite simple and effortless. Makes an amazing side dish, I love to have it as a salad or along with phulkas (Indian flat bread). You can also serve this as a dip along with some garlic bread or pita. I have roasted the eggplant…

  • Saffron Cardamom Shrikhand

    May 24, 2020Niketa

Gudi padwa celebrations (Maharashtrian New Year) aren’t complete if you don’t have rich, creamy and delightful Shrikhand. Basically Shrikhand is an Indian version of flavoured yogurt which is ridiculously easy to whip up. There are quite a few variations but the most favoured one is Amrakhanda, which is made using mango purée. Since it isn’t a mango season yet, I have whipped this Saffron Cardamom Shrikand to start new Maharashtrian year on a sweet note. I have used Greek yogurt to whip this Shrikhand. Greek yogurt being thick in consistency yields smooth and extremely creamy texture. I have flavored this…

    Persian Omelette_recipe by Keencuisinier

As I was growing up I was always curious to learn about different cultures and traditions. This fancy of mine helped me make friends from various ethnic backgrounds from whom I learnt and assimilated their culture. My horizons to learn more about multiculturalism extended when I  started teaching at an international school. Interactions with students and parents from diverse cultural background helped me gain an insight on world cuisine. Food is an extremely vital part of varied cultures that prevail and that being my area of interest helped me discover this amazing persian recipe named kuku sabzi. Kuku sabzi is nothing…

  • Marinara Sauce

    Marinara Sauce recipe

I am a sucker for Italian cuisine and love binge eating anything and everything Italian ranging from margarita pizzas, pastas, cannoli, lasagna, risottos, parmigiana and tiramisu. The base for most of the savory Italian recipes is chunky, hearty, flavorful Marinara Sauce. I would say Marinara sauce is nothing but Italian ketchup  which tastes 1000 times better than the actual ketchup. The Italian herbs, olive oil, onions, garlic, lush tomatoes and most important basil leaves makes this sauce rustic and creamy. I always have a jar full of marinara in my refrigerator which comes in handy on busy evenings. I generally add this sauce to my pastas, pizzas,…

I absolutely love baking but don’t get enough opportunity to bake. When I do, I just grab the chance and bake my heart away. My friend Priya, who is also the source of all the South Indian recipes I know, is relocating to India. It’s so hard to bid adieu to a dear friend😒. Priya and I attend a sewing club once every week and have made some amazing friends.  We all decided to throw Priya a small farewell party at the sewing club and hence I baked this carrot cake. Carrot cake because Easter is just round the corner…
