Wishing you guys a very happy new year! I cant believe we are already celebrating the first festival of the year Makar Sankrant. My resolution for this year is to show up more often here & share my daily kitchen chronicles. If you guys are looking for the most addicting treat, this Sankrant these til gul truffles are it. These little truffles are so irresistible that you won’t be able to stop eating them. These aren’t only pretty but also so delicious. You probably have everything that you need to make these truffles in your pantry.

Ingredients to make Til Gul Truffles & Substitutions:

  • Peanut Butter: I have used unsalted peanut butter for this recipe. It adds a lovely nutty flavor to these truffles This recipe can be made with your favorite nut butter, such as almond butter or cashew butter.
  • Honey : You can substitute with your favorite liquid sweetener. For example, maple syrup or date syrup.
  • Sesame Seeds : I have use roasted powdered black sesame seeds to this recipe. You can use white sesame seeds instead. The powdered seeds absorbs extra oils in the nut butter. Depending on the consistency of the nut butter you may need to add additional sesame seeds or chai seeds so that the mixture can be shaped into a ball.
  • Chia Seeds: If you don’t like chia seeds you can skip adding them . Replace powdered chia seeds with unsweetened shredded or sesame seeds.

Difference between hulled and unhulled sesame seeds:

Hulled sesame seeds are those kinds of sesame seeds from which the outer covering have been removed during manufacturing process. On the other hand , unhulled sesame seeds are those which have their hulls intact.

Unhulled seeds taste slight bitter. On the other hand hulled seeds have a milder flavor , that is more nutty than bitter.

I have used black sesame seeds for this recipe . Black sesame seeds are unhulled , hence are slightly bitter , crisper & intense in flavor . White sesame seeds have a sweeter and nuttier flavor.

Can I use white sesame seeds in place of black sesame seeds?

White sesame seeds can be used as a substitute for black without much of an effect on the taste but will certainly give a different appearance due to the color.

Til Gul Truffles (Sesame Jaggery Truffles)

These Til Gul Truffles are perfect for Makar Sankrant. Naturally gluten free and so simple to make. These bite size balls are made of sesame seeds, chia seeds & bound together by creamy peanut butter, coated in a layer of melted chocolate. It makes a great unconventional festive treat.

Ingredients

  • 1/4 cup black sesame seeds , (40 gms)
  • 1/4 cup chia seeds , (40 gms)
  • 1/4 cup unsalted peanut butter
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp honey , or maple syrup
  • 3 tsp jaggery
  • 1 tbsp water
  • 1.5 tsp Coconut Oil
  • 105 gm dark chocolate
  • 1.5 tsp cardamom powder
  • 1 tbsp white sesame seeds , to garnish

Directions

  • 1)

     

    On a medium flame dry roast black sesame seeds until they begin to pop, transfer them on a plate and let them cool down. Put them in a grinder and pulse to form powder, set aside.

  • 2)

    Then pulse chai seeds to form a powder like consistency.

  • 3)

    In a bowl add sesame powder, chia powder, peanut butter, cocoa powder, cardamom powder. Combine everything well using a spatula.

  • 4)

    Further add water, honey and jaggery powder to the above mixture and give everything a good mix. At this point the mixture should look like a slightly sticky dough.

  • 5)

    Divide the mixture into equal portions shaping them into balls. Refrigerate for 20 minutes to allow them to firm up.

  • 6)

    Melt chocolate chips in a double boiler (or create a makeshift version:  place a heat proof bowl on  a small saucepan with an inch of water in it.) Bring water to boil, turn heat to low, add chocolate chips, coconut oil  and whisk  until the chips are fully melted. Or , in a microwave safe bowl add chocolate chips , coconut oil & melt in a microwave for 90 seconds , stirring the melting chocolate every 30 seconds.

    On the side, get a plate ready and line it with parchment paper to place the chocolate dipped balls. Take the firm balls out of the refrigerator and drop in the melted chocolate, use a fork to roll each ball to coat well in the chocolate. Transfer to the plate lined with parchment paper using two forks to lift.

  • 8)

    Garnish the truffles with white sesame seeds. Place the plate in the refrigerator for 10-15 minutes so that the chocolate sets. Store these truffles in an air tight container in the refrigerator up to a week.

Notes

  1. You can use white sesame seeds instead of black sesame seeds.
  2. This recipe yields 12 bite size truffles. You can easily double the ingredients to make a bigger batch.
  3. You can add more honey or jaggery if you like, I like semi sweet taste so I didn’t add much.
  4. While rolling the balls if you feel the mixture is too sticky you can add more roasted sesame seeds or chia seeds powder.
