Cocoa Brownies

      Ingredients

      For Brownie:

      • 3 Large eggs
      • 1 tsp Vanilla extract
      • 2/3 cup Vegetable oil / flavorless oil
      • 2/3 cup Unsweetened cocoa powder
      • 1/2 cup All purpose flour
      • 1/4 tsp Baking powder
      • 1/2 tsp Salt
      • 1 1/2 cup Sugar

      For Frosting:

      • 1 tbsp Butter
      • 1/4 cup Milk chocolate
      • 1 tbsp Cream (Optional)

      Directions:

      • 1)

Preheat the oven to 350 degrees

      • 2)

Line the baking pan with a baking sheet. Grease some butter to the paper

      • 3)

In a  microwave safe bowl add oil and heat it for 4-5 seconds only. Add the sieved cocoa powder to the warm oil and whisk it until completely smooth and combined. Set it aside for 5 minutes.

      • 4)

In a big bowl crack the eggs, add the sugar, vanilla essence and beat on medium speed until fluffy.

      • 5)

Add half of the cocoa mixture to the egg mixture and beat it until the mixture looks shiny and fully combined.

      • 6)

Next add sieved flour, baking powder, salt, the remaining cocoa mixture to the egg mixture and beat everything until the batter appears shiny and well combined.

      • 7)

Make sure you are beating the mixture only in one direction i.e either clockwise or anti-clockwise.

      • 8)

Transfer the mixture to the baking pan, bake it for 20- 25 minutes. These brownies will pull away from the edges of the pan thus indicating they are done.

      • 9)

Let the brownies cool down before cutting then into squares.

      • 10)

I made a ganache frosting by melting milk chocolate, heavy cream and butter in a double boiler and poured it on my brownies (this step is optional)

      • 11)

The above recipe yields 16-18 pieces of brownies.
