This creamy coconut cooler recipe is prefect for the summer. It makes you think of tropical paradise. It is creamy, refreshing, delicious and ridiculously easy to put together. This refreshing drink is a sweet combination of coconut milk, coconut water, sweetener, ice and and a hint of nutmeg. This refreshing cooler can easily become your go to summer drink.

I am a big fan of PF Chang’s coconut cooler but didn’t want to break the bank so I made this copy cat version at home. Who doesn’t want to save time and cash on restaurant meals, I certainly do. My version of cooler tastes very similar to the restaurant. It’s made with common ingredients everyone can find in their kitchen. I love to enjoy this refreshing drink on a hot humid day in the comfort of my home.

This Coconut Cooler comes together in no time and uses just a handful of ingredients.

  • Coconut Milk: I used store bought coconut milk .Make sure you buy unsweetened full fat coconut milk. Don’t shake the can before opening. It helps coconut cream to float at the top, it is very thick and tastes like coconut but unsweetened. Alternatively, you can just buy coconut cream.
  • Coconut Water: I used Vita Coco Pure Coconut Water, it is super refreshing and sweet. It contains less than 1% fruit sugar and is packed with vitamin C. Alternatively, you can use fresh coconut water. The taste of the coconut water depends on where the palm tree is grown.
  • Sweetener: I have added maple syrup to sweeten the cooler. Alternatively you can add agave syrup or sugar.
  • Nutmeg Powder: Addition of nutmeg powder gives a distinct warm, nutty flavor to this sweet refreshing drink. Although, store bought ground nutmeg is the most convenient option, nutmeg tastes most flavorful and fragrant when freshly ground from the seed.
  • You will also need ice for serving this coconut cooler.

    • 3 tbsp Full fat Coconut Milk
    • 1.5 tsp Nutmeg Powder
    • 3 tbsp Maple Syrup
    • Ice

      In a blender combine coconut milk, coconut water, maple syrup and nutmeg powder. Blend until its all well combined. Alternatively, you can use a milk frother to combine all the ingredients.

      Divide ice cubes into 3 glasses. Add the coconut mixture. Top it with the froth and sprinkle nutmeg powder. Enjoy your drink!
