Instant Pot Seviyan Kheer aka vermicelli kheer is an easy, creamy and delicious Indian dessert recipe. It’s a pudding made with vermicelli, milk, sugar, nuts, cardamom and saffron.
What is Seviyan Kheer :
Seviyan kheer also known as semiya payasam, shevyachi kheer, sevai kheer is a very popular Indian pudding recipe. I have grown up eating kheer like every Indian. Traditionally kheer is made on a stove top by reducing milk to half of its quantity resulting in a creamy, thick kheer. If you are looking for a quick last minute dessert to make, then this incredibly easy Instant Pot Kheer recipe is all you need. This seviyan kheer recipe makes a perfect dessert to bring to any gatherings or potluck parties.
Vermicelli Kheer can be served both cold or warm based on the liking. I love to relish my kheer cold with some hot poli (roti) or puris. If my family craves something sweet I simply make a pot of IP kheer as it really comes together in no time. You can say it’s our go to dessert.
Ingredients & Substitutes :
Milk: I like to use full fat whole milk as it gives this kheer creamy and rich texture. Alternatively, you can use almond milk or cashew milk to make it vegan. You can even use skim or low fat milk, but the texture of the kheer may vary.
Vermicelli : Aka Seviyan, sevai is a variety of thin noodles made with wheat semolina or all purpose flour. You can easily buy vermicelli from any Indian grocery store. You can either buy unroasted or roasted vermicelli. For the convenience I prefer buying roasted variety so I can skip the roasting step & save time.
Sweetener: I use sugar to sweeten the kheer. Alternatively, you can use brown sugar, maple syrup, jaggery but the color of the kheer will vary.
Nuts & Dried Fruit: I generally add slivered cashews and almonds to the kheer for it adds a beautiful texture to it. I love to garnish it with slivered pistachios and dried rose petals.
Flavors: Addition of cardamom powder and cloves add such lovely flavor to the kheer. I love to add saffron too as it gives a beautiful yellow color to the kheer. Adding saffron and cloves is optional.
How To Make Instant Pot Seviyan Kheer :
Make sure you thoroughly sanitize all the parts of the instant pot before making kheer. This step is very important to avoid curdling of milk.
Roast the vermicelli by adding some ghee on a sauté mode in an instant pot or on a stove top. Roast until it changes the color to light brown. Keep a close eye while roasting the vermicelli to avoid burning. Skip this step if you are using roasted vermicelli like I prefer.
Add all the ingredients – ghee, roasted vermicelli, cloves, sugar, milk, cardamom powder, saffron and nuts to the instant pot. Make sure you reserve some for garnishing.
Pressure Cook the Kheer– Close the lid and choose the porridge button and adjust the time to 8 minutes. Make sure to move the valve in sealed position. Let the pressure release naturally. Open the pot and gently mix the kheer. The kheer will thicken as it cools down.
Garnish & Serve – Garnish the kheer with the reserved nuts, raisins, rose petals or saffron strands. Serve it hot or cold based on your liking. I personally love chilled kheer with some puris (poori).
Leftovers & storage – Store the leftover vermicelli kheer in an airtight container. You can refrigerate it up to 2-4 days, hence it makes a great make ahead of the time dessert. You can even freeze the kheer up to 2 months.
Tips, Tricks, Alternatives & Variations to Make Vermicelli Kheer:
Firstly, use pre roasted vermicelli as it saves roasting time.
Secondly, use full fat grass feed whole milk as it yields super creamy & rich texture. You can even add some milk powder as it adds a rich flavor and texture to this recipe.
For the convenience use store bought cardamom powder.
You can easily make this recipe dairy free by replacing whole milk with almond milk or cashew milk.
Once you get the base recipe right you can easily play around with the flavors .You can add rose syrup, mango puree, vanilla essence.
If you want you can even replace refined sugar with brown sugar, jaggery, maple syrup or dates.
