Vegetable Rice recipe

I love colours on my plate. If you have noticed mostly the colour of the garnishing on savoury items is always green in colour. I generally garnish my food with a generous amount of cilantro, basil or parsley.

I was clearing my fridge and coincidently had only a few greens left on the rack which led me to come up with this green pulav recipe. I have more or less used the same recipe as the traditional vegetable pulav but added green veggies too.

So without further ado let’s cook this one pot meal.

Green Pulav

      Ingredients

      • 1 1/2 cup Basmati Rice
      • 1/2 cup Broccoli florets
      • 1/4 cup Green peas
      • 1/2 cup Chopped spinach
      • 1 Green capsicum
      • 1/4 cup Chopped onions
      • 3 Cloves
      • 1 inch Cinnamon stick
      • 3 Cardamoms
      • 1 Bay leaf
      • 1/2 tsp Cumin seeds
      • 2 Dried red chillies
      • 1 Green chilli
      • 3 tbsp Ghee / Clarified butter / Oil
      • Salt to taste
      • 1/2 tsp Garam masala powder
      • 2 tsp Ginger garlic paste

      Directions:

      • 1)

        Soak the rice in water for 30 minutes.

      • 2)

        After 30 minutes, rinse the rice in a microwave safe bowl and add 2 cups of water, salt to taste. Cook the rice in microwave for 15 minutes (you can cook the rice on stove top or any other way you want).

      • 3)

        Heat the ghee in a saucepan, add cinnamon, cardamom, cloves, bay leaf and sauté until you smell the aroma.

      • 4)

        Next add onions and sauté them until they turn translucent. At this point add ginger garlic paste and continue to stir until the raw smell of ginger garlic fades away. 

      • 5)

        Now throw in all the veggies and fry them until well cooked, add some salt to taste and garam masala powder.

      • 6)

        Final step is to add the cooked rice, give a good mix and leave it on a medium flame for 2 minutes.

         

        You can serve this rice with a wedge of lemon or with raita
