Strawberry Ladoo makes a healthy, delicious and refined sugar free dessert alternative to make this festive season. This recipe is pretty easy to make and is packed with nutritious ingredients.
If you are avoiding refined sugar just like me, these ladoos make a healthy alternative. These make a great treat to add to your Diwali Mithai Box. Look no further and check out these delicious no-cook ladoo recipe which taste like strawberries. These bite size ladoos have a refreshing floral strawberry rose flavor & are packed with nuts and coconut. To sweeten them, I have used Medjool dates. This recipe is very forgiving, so you can substitute and adapt the ingredients to your liking.
Ingredients to make Strawberry ladoo:
Freeze Dried Strawberries: I usually get mine from Trader Joes as they don’t have any added sugar. Frozen strawberries and freeze dried strawberries are not the same. Freeze drying a fruit is a process used to remove moisture from a fruit, in order to make it last longer without any preservatives. Freeze dried fruits are very light, crispy and intense, concentrated with fruit flavor. Link the freeze dried strawberries.
Cashews: I have used raw cashews in this recipe. Raw cashews have a mild, buttery flavor that work perfectly well in this recipe. Alternatively, you can use roasted cashews, just note that roasted flavor does come through.
Pitted: I have used medjool dates in this recipe. These dates have a rich, soft, chewy and caramel like taste. Alternatively, you can use Deglet Noor that are easily available in any grocery store. Deglet Noor aren’t overly sweet and have a nutty flavor.
Vanilla Extract: I like to use pure vanilla extract in this recipe. Extract has much stronger and richer flavor. If you don’t have vanilla extract feel free to add essence. 1tsp Vanilla Extract = 2tsp Vanilla Essence.
Almond Flour: I have used almond flour for this recipe as it is made from blanched almonds. Its finely ground resulting in smooth texture. This recipe is very forgiving, you can easily substitute with desiccated coconut powder or cashews.
Desiccated Coconut Powder: I have used unsweetened desiccated coconut powder to make this recipe refined sugar free.
Rose Water: Rose water adds a distinct floral taste to this recipe. Addition of rose water keeps them moist. A little goes a long way. Alternatively, you can use rose essence in this recipe. Also, you can skip adding rose water and use water instead.
Equipment:
You will need a Food Processor or a high speed blender.
How To Make Strawberry Ladoo:
Add the dry ingredients (except rose water & vanilla extract) to a food processor or a high speed blender. Process for about 20-30 seconds or until the ingredients breakdown into a coarse powder.
Transfer the mixture on a plate. Add rose water and vanilla extract. Combine everything with a spatula until the mixture comes together in a dough. The consistency should be sticky and easily able to scoop and roll into bite size ladoos.
With 1tbsp ice-cream scoop, scoop out the mixture and roll the ladoos. This recipe makes around 21 ladoos.
How to store:
Store the ladoos in an airtight container in the refrigerator upto a week.
How to use leftover freeze dried strawberries:
If you have some additional freeze dried strawberries, grind them into a powder and coat the ladoos in it. Alternatively, you can use desiccated coconut powder to coat the ladoos.
