This healthy 3 ingredient sesame brittle is crunchy & sweet. Layered with chocolate, creamy tahini & toppings. It will easily become your favorite snack. You don’t need to switch on your stove, all you need is just your oven, microwave & freezer.
This sesame chocolate bark is crispy, toasty and sweet with a deep nutty flavor, makes a great bite size snack. I have topped the brittle with a layer of semi-sweet chocolate. I love to add toppings to the chocolate layer as it adds colors & texture. So to bring out the nutty flavor of this bark, I topped it with dried rose petals, toasted white sesame seeds, tahini and coconut flakes. You can get creative with the toppings and add any of your choice. For example, pistachios, peanuts, almonds, hemp seeds, sunflower seeds or chia seeds.
This is a great flavorful recipe when you are looking to give a spin to the traditional til chikki aka sesame brittle. You can use different kinds of chocolate to adjust to the desired level of sweetness. I think these will make a great treat to make and share during the festival of Makar Sankrant. Quick and easy to make, these are pretty addictive.
Ingredients to make Sesame Brittle layered with chocolate:
- Sesame Seeds: I have used hulled white sesame seeds in this recipe as these are a bit soft, easy to chew & mild in taste. Whereas unhulled seeds are very crunchy and strong in flavor. I prefer hulled seeds for this recipe.
- Chocolate: I have used semi-sweet chocolate for this recipe. Depending on your liking you can substitute with milk chocolate or dark chocolate. Just note that darker the chocolate, less sweet and more bitter the bark will be.
- Maple Syrup: I have use maple syrup to make the brittle. Alternatively, you can use honey to sweeten the brittle.
- Ghee: I have used melted ghee to make the brittle. You can substitute ghee with melted coconut oil, olive oil, basically any neutral oil.
- Tahini: Tahini adds an earthy, nutty flavor and creamy texture to the bark. It has a tinge of bitterness. If you don’t have or like tahini, you can use peanut butter, almond butter or cashew butter to make the swirls. You can totally skip adding tahini, I simply added it as the swirl pattern adds a beautiful appearance to the bark.
- Cardamom powder: I have added cardamom powder to the melted chocolate to bring out the earthy flavors in the brittle and chocolate. Alternatively, you can use nutmeg powder, cinnamon powder.
- Toppings: I have added dried rose petals, coconut flakes and sesame seeds as toppings. You can get creative and add toppings of your choice.
Tips to make perfect Sesame Chocolate Bark
This Sesame Chocolate Bark recipe is simple to make and requires only 10 minutes of preparation time.
- Making the Sesame Brittle Layer: The first step is to add sesame seeds, maple syrup and melted ghee in a medium mixing bowl. Mix well until everything is combined. Then transfer onto a lined baking tray. Pat down with a spatula, packing all the ingredients together and spreading it out evenly over the tray. Bake at 275 degrees F for 20-25 minutes.
- Let the sesame brittle cool completely. The brittle firms up and becomes crisp only when you allow it to cool completely.
- The Chocolate Layer: To make the chocolate layer simply melt the chocolate in a microwave for 90 seconds, stirring every 30 seconds. Alternatively use a double boiler to melt the chocolate. Once the sesame brittle layer hardens, pour the melted chocolate all over and spread it out with a back of a spoon or with a small offset spatula. Add tahini on the various spots on the chocolate layer. Use a fork or wooden skewer or took pick swirling the chocolate and tahini together. Sprinkle the toppings then place in the fridge for at least 30 minutes for the chocolate to set.
- Line the baking tray with either silicone baking mat, parchment paper or wax paper to avoid the brittle from sticking to the tray.
- Use a sharp knife to cut the brittle into pieces and desired shape. Alternatively, you can just break the bark into pieces with your hands.
- Storage: Store the sesame brittle bark in an airtight container in the fridge or freezer. Make sure you don’t stack the pieces, instead use a parchment paper between two stacked barks.
