Peach Salad Recipe is a refreshing summer salad recipe that comes together in minutes. It’s certain to be a crowd pleaser at any gatherings. This delicious salad is made with sweet peaches, mozzarella, crisp mixed greens, almonds and is tossed with an easy dressing. This salad literally screams summer on a plate.

This peach salad is a must serve at your summer gatherings. I simply enjoy this salad as a light lunch during weekdays.

This salad recipe is very forgiving if you don’t have peaches add strawberries or blueberries. I have added my pantry staples to this recipe and each ingredient has added so much texture, flavor and balance to the taste. This salad is a perfect balance between sweet and savory.

Ingredients to make a peach salad:

Fruit & Veggies: I have used baby lettuce but you can also use a combination of baby arugula and spinach. I have added peaches along with tomatoes in this recipe. Alternatively, you can also use strawberries, red onions and avocado.

Toppings: I have added sliced toasted almonds for the crunch to this salad. Toasted pistachios or sunflower seeds will taste great too. I have added torn mozzarella pearls for a creamy texture. Alternatively you can add crumbled goat cheese or feta.

For The Dressing: This delicious dressing for salad is made with olive oil, apple cider vinegar, minced garlic, maple syrup, salt and pepper.

Step-By-Step Instructions

This peach salad recipe takes less than 20 minutes to make.

  • Make the dressing: In a jar, combine all the dressing ingredients. Seal the jar and shake until ingredients are evenly combined.
  • Prepare the Peaches: Using a pairing knife lightly slice the peach along the seam, from the bottom to the stem. Separate the halves by twisting in opposite direction. Remove the pit using your hand. Slice the peach to the desired thinness or thickness. My family loves thinly sliced peach so I slice them thin.
  • Assemble The Salad: On a platter or salad bowl add mixed greens. Top it with tomatoes, peaches, torn mozzarella and almonds. Drizzle the prepared salad with the dressing and enjoy.

Peach Salad

Ingredients

Peach Salad

  • 2 Peaches, Sliced or wedges
  • 5 cups Baby Letteuce Mix , or mix of baby arugula, spinach, lettuce
  • 8-10 Cherry Tomatoes , cut into half
  • 2 oz Mozzarella Cheese
  • 2 tbsp Roasted Almonds , roughly chopped

Salad Dressing

  • 1/4 cup Olive Oil or Avocado Oil
  • 2 tbsp Apple Cider Vinegar, or lemon juice
  • 1.5 tbsp Maple Syrup , or honey
  • 1 Clove Garlic, Minced
  • 1 tsp Sea Salt
  • 1/2 tsp Black Pepper Powder

Instructions

Make the Dressing

  • 1)

    In a jar add olive oil, apple cider vinegar, minced garlic, salt, pepper and maple syrup. Seal the glass with a lid and shake well. You can also add all the ingredients to a tall measuring jar and stir it with a whisk or fork. Set the dressing aside.

Make The Peach Salad

  • 1)

    In a large bowl or a salad plate add the greens, top it with sliced peaches, tomatoes, crumbled mozzarella and toasted almonds. Drizzle the salad with dressing, toss together to combine. Serve immediately.

Notes

I prefer to add dressing on individually while serving, so incase I have leftovers the salad doesn’t turn soggy. You can store the leftover dressing separately in a jar up to 2 days.

Make sure to choose ripe peaches for sweetness. The peaches should be ripe but also firm so they don’t turn mushy.

My daughter prefers peeled peaches but you can keep the skin on too.
