Start by boiling the eggs. Meanwhile dice the onions, throw them in a microwave safe container, add some oil and cook them in a microwave for 4-5 minutes

Ingredients
- 4 Hard boiled eggs
- 1 Finely chopped onion
- 2 Finely chopped tomatoes
- 2 Cardamom
- 1 inch Cinnamon
- 4 Cloves
- 5 peppercorn
- 3 tbsp Oil
- 1 1/2 tsp Red chilli powder
- 1/2 tsp Turmeric powder
- Salt to taste
- Coriander leaves to garnish
- 1/4 tsp Mustard seeds
For masala:
- 1 Medium sized onion
- 4 Garlic cloves
- 1/2 inch Ginger
- 2 Dry red chillies
- 1 tsp Cumin seeds

In a grinder add the cooked onions, ginger, garlic, chillies, cumin seeds and pulse it to make a fine paste.

Heat oil in a wok, add all the whole spices sauté until aromatic. Next add chopped onions and turmeric powder to the wok and fry it until translucent.

Add the chopped tomatoes, little water and let the masala cook for 4 minutes.

To make the curry flavorsome and spicy, add chilli powder and salt.

Let the curry simmer for a minute or two.

Peel the eggs, cut them into halves.

In a pan heat some oil, add mustard seeds, turmeric powder, chilli powder. Add the eggs and fry them until golden.

Add the fried eggs to the curry and garnish it with coriander leaves.
