Bhadang is a popular Maharashtrian snack recipe. Puffed rice is toasted and tossed in basic tempering. This recipe is incredibly easy to make and requires minimal ingredients.
This crispy bhadang makes a tasty, healthy and perfect mid evening snack. This savory snack comes together in no time. All you have to do is toast the murmura/puffed rice until it crisps up. Lightly toast the nuts. Make the tempering with the basic spices. Add the tempering to the puffed rice and nuts, season with salt & sugar, combine all the ingredients. The best part about this crunchy snack is you can make it a big quantity as it stores well for 2-3 weeks.
I have grown up eating fiery red bhadang (Gore Bhadang is my fav). However, my version is mild as I am making it for my toddler. I have skipped adding chilies, metkut and kanda lasun masala to my toddler friendly version. Regardless, it tastes great and I love to relish it with a cup of chai. You can make this recipe refined sugar free by skipping addition of powdered sugar.
Here is what you will need to make Bhadang:
Puffed Rice: Also known as churmura or murmura. Make sure you toast the churmura on a medium flame until fragrant, make sure you don’t burn it.
Ghee: Ghee adds a wonder nutty, rich taste to this mixture. Alternatively, you can use any neutral oil of your choice.
Salt and Powdered Sugar: A perfect balance of salt and sugar brings out the flavors of basic spices. You can adjust the sweetness level as per your liking.
Nuts & Raisins: I have added toasted cashews and peanuts to this recipe for the extra crunch. Raisins for sweetness plus my daughter loves them.
Tempering: I have used basic spices like mustard seeds, asafotedia, turmeric powder, curry leaves and crushed garlic. Since the recipe calls for basic ingredients addition of curry leaves and crushed garlic adds a ton of flavor to this recipe.
