Eggs Kejrewal is a quick, simple and delicious eggs on a cheesy toast recipe. This recipe is great for breakfast, lunch, brunch or even a quick dinner on a busy night.

What is Eggs Kejrewal?

Apparently it is said that this recipe was created at the Willingdon Sports Club in Mumbai in 1960’s, in honor of Devi Prasad Kejriwal, a member who often requested this recipe of sunny side up eggs on a cheesy toast. Mr Kejrewal’s family did not eat eggs, so he asked that his eggs on toast be disguised. The chef’s at Willingdon Sports Club disguised the eggs by topping them up with a blanket of broiled cheese & chilies. Hence this brilliantly simple cheesy egg toast became popular at the club that it lives on today too.

My sister recently happened to order this dish at a Irani Cafe in Mumbai and has been raving about it ever since. My recipe isn’t authentic, I kept the base recipe idea same and came up with my own version. I have slathered the ghee toasted bread with green chutney, topped it up with cheese & placed a sunny side up seasoned with green chilies, onions, tomato and spices. This has become our current favorite brunch and I seriously don’t know of any dish that is easier and more satisfying. Besides, who can resist those radiant sunny side up eggs surrounded by green chutney and cheese!

Ingredients To Make Eggs Kejrewal

  • Eggs
  • Bread: I have used sourdough bread. Alternatively, you can replace sourdough with your favorite bread.
  • Green Chutney: I use homemade green chutney. Alternatively, you can buy a jar of green chutney. If you make your own chutney you will need fresh mint, coriander, garlic, ginger, salt, sugar, green chilies & roasted chana dal.
  • Salt, Chili Powder, Kanda Lasun Masala: I have seasoned my toast with salt, red chili powder and kanda lasun masala. The addition of onion garlic masala adds a spicy kick to this toast, but you can totally skip it.
  • Cheese: I have used Amul Cheese Slice. Alternatively, you can use mild cheddar, pepper jack or gouda cheese in this recipe. Feel free to mix and match cheese of your choice.

Tips:

  • Cook the eggs to your liking : This recipe calls for runny egg yolks. But if you don’t like a runny yolk, you can always cook it a little longer till the yolk is done.
  • For a lower carb option – ditch the sourdough and just use a low carb keto bread.

  • 2 slices Sourdough Bread
  • 2 tbsp Ghee / Butter, divided
  • 1 tbsp Oil , divided
  • 2 tbsp Green Chutney
  • 2 Eggs
  • 2 slices Amul Cheese , or 4 tbsp Cheddar Cheese
  • 3 tbsp Onion, finely chopped
  • 3 tbsp Tomato , deseeded & finely chopped
  • 2 tbsp Coriander, finely chopped
  • Salt , to taste
  • 1 tsp Chili Powder
  • 1 tsp Onion Garlic Powder , Kanda Lasun Masala

Method

Instructions

  • 1)

    Slather one side of sourdough bread with ghee. Toast it on a griddle until light golden brown.

  • 2)

    Transfer the sourdough on a cooling rack, toasted side down, slather it with ghee. Flip the sides and slather the toasted side with green chutney, top it up with a cheese slice.

     

  • 3)

    Transfer the sourdough bread on the griddle, cover and toast until cheese melts.

  • 4)

    Add oil to a nonstick skillet over a medium high heat. Crack the egg into the skillet, and sprinkle with salt and chili powder. Also add finely chopped onions, tomatoes, green chili, coriander.

  • 5)

    Cover and cook the egg until the egg white is firm and yolk is runny. This will take about 4-5 minutes.

  • 6)

    Top the sourdough bread with melted cheese side up with the sunny side up fried egg, more coriander and kanda lasun masala (onion garlic masala).

  • 7)

    Serve immediately while its hot.
