Sheet pan meals are my absolute favorite. This roasted aloo gobi recipe is quick, simple and easy recipe that turns neutral tasting cauliflower into a star. On most days this delicious side dish doesn’t make it to dinner table as my family eats it on the go…that’s how much they love it! The recipes uses basic spices easily available in any Indian pantry. This aloo gobi recipe is vegan, gluten-free, whole 30 compliant, incredibly low carb and takes only 30 minutes to make. This is one of our weekly staple side dish which I serve with rice or roti. There are many ways to make this aloo gobi. My family likes this dry aloo gobi the most.

Sheet Pan Aloo Gobi

Delicious Sheet Pan Aloo Gobi - a very popular, vegan , gluten free side dish of potatoes and cauliflower coated in mildly spiced masala. Serve it with rice or roti or have it just by itself.

Ingredients

  • 1 large head of Cauliflower
  • 3 Baby Potatoes
  • 1 tsp Carom Seeds
  • 1/2 tsp Cumin Seeds
  • 1/2 tsp Turmeric powder
  • 2 tsp Chilli powder
  • 1 tsp Garlic powder
  • 1.5 tsp Coriander powder
  • 1.5 tsp Dry Mango powder
  • 1 tsp Salt
  • 2 tbsp Oil
  • 1 tbsp Chopped Coriander , to garnish

Directions:

  • 1)

    Pre heat the oven to 400 degrees F. Line a baking tray with parchment paper.

  • 2)

    Rinse the cauliflower and cut the florets off,  cut the potato into wedges. Place them in a large bowl.

  • 3)

    Drizzle the oil over the florets & potato, add cumin seeds, carom seeds, turmeric powder, coriander powder, chilli powder, dry mango powder, garlic powder asafotedia & salt. Toss together with a spoon or hands so that the veggies are well coated with the masala.

  • 4)

    Spread evenly over the prepared baking tray. Bake at 400 degrees F for about 30 minutes or until the edges are browned & crisp.

  • 5)

    Garnish with finely chopped coriander leaves. Serve with roti.

Notes

You can store the leftover aloo gobi in the refrigerator for up to four days.
