Pan seared Salmon with Pesto

I feel completely unmotivated to cook solo meals, hence I tend to skip them. But later end up overeating to compensate on the skipped meal. There are a few recipes which are a keeper, this one being one of them. I generally pick up fresh salmon fillet on my way back home from the gym and stir up this extremely easy and hearty recipe.

To whip up this pan seared salmon you only require literally 5 ingredients – salt, olive oil, pepper, pesto of your choice and broccolini. I always have a jar of homemade either cilantro or basil pesto handy as it adds so much flavour and character to some recipes.

I have topped the salmon with coriander pesto and served it with stir fried tender broccolini on the side. I love  citrus flavours, so a lemon wedge or slice is mostly on the side always.

Pan seared salmon with coriander pesto & broccolini

      Ingredients

      For coriander pesto

      • 2 tbsp Pine nuts
      • 2 cups Coriander/cilantro stems, washed
      • 1 Garlic Clove
      • 1 Green chilli
      • Olive oil & Water, As required
      • Salt, To taste

      For pan seared Salmon & brocollini

      • Olive oil
      • 1 Salmon fillet
      • 1 tsp Freshly cracked pepper
      • Salt, To taste
      • Brocollini

      Directions

      • 1)

        In a blender add pine nuts, coriander leaves, garlic, salt, green chilli. Blitz it by adding a little water and olive oil. Make sure the pesto isn’t runny, it should be chunky. Set aside.

      • 2)

        Now wash and pat dry the salmon fillet, rub it with oil, salt and pepper.

      • 3)

        Heat some oil in a pan add the tender brocollini and salmon fillet.

      • 4)

        Cover the pan with a lid and let the salmon cook for about 5 minutes.

      • 5)

        Next flip the side of salmon and cook for another 3-4 minutes. If the brocollini is cooked transfer it onto a plate or further cook to make it crispy.

      • 6)

        Gently transfer the cooked salmon onto a plate, top it up with pesto.

      • 7)

        Sprinkle salt and pepper to the tender brocollini and serve hot.
