I am following low carbs high fat diet since 14 days and have lost 7 pounds by eating more fats, moderate protein and low carbs. This is the only diet that I am enjoying and actually look forward to my meals.

I am a kind of person who needs variations in my meals to break the monotony. I cannot keep on eating stir fry, eggs, fish all the time. I needed chicken, so I came up with this zesty lemon pepper chicken recipe.

I used halal chicken tights as they are high in fats which suited my dietary requirements. You can also use chicken breast if you prefer. I suggest you to marinate the kitchen for minimum of 2 hours inorder to get the desired zesty taste. Lest get to the recipe now.

Lemon Pepper Chicken

      Ingredients

      • 250 gm Chicken thighs / breasts
      • 2 tbsp Lemon juice
      • 1 1/2 tsp Freshly cracked pepper
      • 1 tsp Chilli flakes
      • 1/4 cup Heavy cream
      • 2 tbsp Shredded cheddar cheese / any cheese of your choice
      • 1 tbsp Butter / Olive oil
      • 1/2 tsp Garlic powder
      • 1/2 tsp Dried oregano
      • 1/4 tsp Dried pasta herbs (Optional)
      • 3-4 Basil leaves

      Directions:

      • 1)

        Clean, wash and pat dry the chicken.

      • 2)

        In a bowl add the chunks of chicken, season it with garlic powder, pepper, lemon juice, salt and rest in the refrigerator for minimum 2 hours. For the best zest taste marinate overnight.

      • 3)

        Bring the chicken to the room temperature, heat butter in a pan and add the chicken marination to it.

      • 4)

        The chicken might ooze water depending on how much lemon juice you have squeezed in.

      • 5)

        Let the chicken cook until it turns from pink to white in colour. At this point add heavy cream, cheddar cheese, chilli flakes and oregano. 

      • 6)

        Let creamy sauce cook for 2 minutes, add salt taste and chilli flakes .

      • 7)

        If you aren’t on a keto diet you can make this sauce and add some boiled pasta to it or have it with any bread of your choice.
