The scorching summers in India makes one crave for refreshing coolers. There are so many energy drinks available in the supermarkets, but nothing beats a jar full of homemade  kairicha panha. Karichi panha is a raw mango cooler which tickles ones taste buds leaving one feel refreshed. I simply love panha for it offers sweet, tangy and salty flavors, all three at the same time.

My mom always used to welcome me home post work with a glass full of this goodness. I remember gulping it down to help me restore all the lost energy in the harsh sunny Indian weather.

Sharing my mom’s quick recipe to make a jarful of panha to keep yourself hydrated and energetic in the summers.

Kairicha Panha (Raw Mango Cooler)

      Ingredients

      You will need:

      • 1 large Raw Mango
      • 1/2 Cup Sugar, You can add more if you want, depends on how tart the raw mango tastes
      • To taste Salt
      • Generous Pinch Saffron strands
      • 3 tsp Cardamon Powder

      To serve

      • Ice
      • Water
      • Mint Leaves

      Procedure

      • 1)

        Start by thoroughly washing the raw mango. Pat dry it with a kitchen towel.

      • 2)

        Next peel the raw mango, chop it into big chunks. Transfer the chunks to a vessel and add little water to it. Now place this vessel in the pressure cooker and cook the raw mango to 2 whistles. (If you don’t have a pressure cooker you can simply boil the whole raw mango).

      • 3)

        Once the chunks are cool enough, strain them to remove excess water. Now place them in a grinder, adding sugar and salt. Blitz everything until you get a smooth pulp.

      • 4)

        Now strain the pulp in case there are still some chunks. Add 3 tsp of freshly pounded cardamom powder and saffron strands.

      Serving

      • 1)

        In a glass add 2 tbsp of pulp, 2 ice cubes and chilled water. Stir everything well. Garnish it with mint leaves and saffron strands.
