Dhokla is an irresistible savory cake from Gujrat, India. This nutritious treat is made using chickpea flour which also makes it vegan and gluten free!

This is the most easiest and healthiest  appetizer ever. I have almost lost the count of the number of times I have steamed some Dhokla.

I have tried my hand at serveral Dhokla recipes but this recipe borrowed from a friend is the simplest of all and yields spongy and soft texture. Dhokla makes a great appetizer recipe and tea time snack which can be made ahead of time.

I have made this Dhokla in an idli steamer but if you do not have one you can create a steamer of your own. Take a big saucepan, add water to it. Place the vessels with batter in the saucepan and cover it with a strainer. Now cover the saucepan with a lid and let the Dhokla steam for about 15-20 minutes.

Dhokla

      Ingredients

      For Dhokla:

      • 1 Glass of water
      • 1 1/2 tsp Salt
      • 7 tsp Oil
      • 6 tsp Sugar
      • 1 1/2 tsp eno fruit salt (regular)
      • 1/2 tsp Citric acid
      • 1 1/2 cup Chickpeas flour
      • 1/4 tsp Turmeric powder

      For tempering:

      • 1 tsp Mustard seeds
      • 6-8 Curry leaves
      • 1/4 tsp Asafoetida
      • 3-4 Green chillies
      • 1 1/2 tbsp Oil
      • 1/2 glass Water
      • Salt to taste
      • Sugar to taste
      • Pinch Citric acid

      Directions:

      • 1)

        In a bowl pour a glass of water. Add sugar, salt, citric acid and oil. Stir it to dissolve salt, sugar and citric acid. 

      • 2)

        In a plate sieve chick flour and turmeric powder. Transfer the chickpea flour to the above mixture.

      • 3)

        Mix all the ingredients well  and set aside. 

      • 4)

        Grease the idli moulds by applying some oil.

      • 5)

        Add eno to the batter mix it well.

      • 6)

        Pour the batter to the idli mould and place it in the idli steamer.

      • 7)

        Cover it with a lid and steam the Dhokla for about 15-20 minutes. After 15-20 minutes insert a toothpick in the Dhokla, if it comes out clean then your Dhokla is fully cooked.

      • 8)

        With the help of a knife loose up the Dhokla.

      • 9)

        Once you loosen up the Dhokla from all the idli moulds, make the tempering. 

      • 10)

        For tempering- Heat oil in a pan, add green chillies, asafoetida, mustard seeds and curry leaves. Let it splutter. Add sugar water, salt and a pinch of citric acid, mix well.

      • 11)

        Pour this mixture over the steamed Dhokla.

      • 12)

        Garnish it with freshly chopped coriander leaves and freshly grated coconut.

      • 13)

        You can serve fluffy Dhokla with some green chutney or tamarind chutney.
