This easy cream of chicken soup recipe is a heathier alternative to the canned condensed chicken soup. This soup is light, creamy, has subtle flavors which brings comfort on a cold wintery days.
I like to cook from scratch as it gives me the liberty to adapt the ingredients to my liking. There is no doubt about canned stuff being convenient and I use it occasionally too but they contain a lot of sodium and calories especially the soups and spice mix . This healthier substitute for cream of chicken soup is super quick to make comes together in under 25 minutes and the outcome is way more delicious than the canned stuff.
Ingredients to make cream of chicken soup:
- Chicken Broth: I have used Chicken Broth for this recipe. Alternatively , you can use 1 chicken bouillon cube
+1 cup hot water. Vegetarians can use vegetable broth. - Milk: Milk is the base of this creamy soup recipe.
- All Purpose Flour: Thickens the soup. Alternatively , you can use gluten free flour, cornstarch or arrowroot powder.
- Seasoning: I added salt ,pepper, dried parsley to enhance the flavors of the soup. You can spice up the soup based on your liking.
- Corn Kernels: I have used frozen corn kernels in this recipe. Make sure you thaw & wash them before adding it to the soup.
Variations:
- This recipe can be easily turned into cream of mushroom soup by adding mushrooms while cooking. You can even add boiled chicken pieces to this recipe.
- Spice up the soup your liking .For example , you can add chili flakes or herbs of your choice.
- You can even add veggies such as carrots, beans , broccoli or chicken to make a meal out of it. Feel free to thin out the soup by adding water and adjust the consistency to your liking.
How to make this soup gluten free:
Love making soups from scratch over store bought ones as they allow me to use better ingredients. If you care allergic to gluten , feel free to substitute regular flour with gluten free flour, cornstarch or arrowroot powder.
