Cold Noodles in Sesame Sauce
Cold Noodles smothered in delicious Asian sesame sauce can be served at room temperature or warm. These noodles make a great side dish for summer parties. You can completely turn it into a meal by adding veggies like carrots, cabbage, bell peppers, onions and edamame. Feel free to add some shredded chicken or tofu for proteins. This recipe is so easy to make and its perfect for lunch box because its best to eat it cold or at room temperature.
Ingredients:
To make this easy cold noodles you will need:
- Noodles: I make this recipe with Brown rice millet noodles. But any kind of noodles will work here for instance -spaghetti, linguine, ramen, instant noodles .
- Coconut Aminos: Or you can use light soy sauce.
- Rice Vinegar: Or substitute red wine vinegar
- Toasted Sesame Oil : It gives lovely earthy nutty flavor to these noodles. Alternatively, you can use light olive oil, canola oil or avocado oil.
- Ginger & Garlic: For the earthy flavors I like to add fresh ginger & garlic. Alternatively , you can use garlic & ginger powder.
- Tahini: Adds nutty creamy texture to the noodles. As a substitute you can use almond butter or smooth peanut butter
- Honey: Or Coconut sugar
- Chili Flakes: Or use Sriracha
- Toasted Sesame Seeds: Lightly toasted sesame seeds bring out nutty flavors
- Green Onions: these add onion flavor in a more subtle way.
How To Make Cold Noodles in Sesame sauce:
To make these cold noodles:
- Firstly Cook your noodles: You can use ramen, instant noodles, spaghetti or linguine. Whatever kind of noodles you choose make sure you follow package instructions and cook it al dente.
- Secondly make sesame sauce: Meanwhile, as the noodles are cooking, mix all the sauce ingredients together in a small bowl. I add a splash of water to help combine it well.
- Toss noodles in sauce: Once the noodles are done, drain the water. Rinse cooked noodles with cold water to avoid them from sticking. Then add them to sauce & toss using tongs.
- Add seasoning: Taste and adjust the salt, chili flakes, oil & sauce.
- Lastly Garnish & Serve: Serve the noodles right away by adding the garnish.
How to store Sesame Sauce
This sesame sauce can be refrigerated upto 3 days.
