No Potato No Butter Pav Bhaji

Pav bhaji is a very popular Indian street food. Its nothing but a mash of veggies spiced with pav bhaaji masala, butter, garnished with tons of onions, cilantro & served with roasted buttery dinner rolls. The main two ingredients which make pav bhaji delicious are potatoes & butter but both these ingredients are high in carbs & saturated fats. Since I am watching out my calorie intake I thought of recreating this recipe sans butter & potatoes.

I know you would say does it even taste like a pav bhaji without both these ingredients. Well I insist you to give this recipe a go & you wont even know that the two main ingredients are missing.

Traditionally raw banana is used as a substitute for potatoes but I haven’t used the same. Well I wont keep you guessing anymore, I have used cauliflower & mung beans instead as these two ingredients are neutral in taste, due to which these ingredients absorb strong flavors, making it the perfect canvas for any savory dish.

Which brand of pav bahji masala to use ?

I swear by Everest Pav Bhaji masala. You can use any brand of your choice .

What veggies to add in Pav Bhaji?

I generally make pav bhaji as my clearing the refrigerator meal. You can add any neutral tasting veggies of your choice. I personally like to add onions, tomatoes, bell peppers, zucchini, peas, carrots, cauliflower and french beans.

No Potato No Butter Pav Bhaji

    If you have had enough of potatoes and want a healthier alternative, look no further than cauliflower mung beans pav bhaji. This pav bhaji has lower carbohydrates and glycemic load compared to potatoes, making it a suitable alternative. Enjoy this guilt free version of the famous Indian street food the healthier way.

    Ingredients

    • 1/2 cup Onions , finely chopped
    • 1/2 can diced Tomatoes
    • 1 tsp Garlic
    • 1 tsp Ginger
    • 1 Green bell pepper , finely chopped
    • 2 Carrots
    • 1.5 cup Cauliflower rice , or 1.5 cups finely chopped cauliflower florets
    • 1/4 cup Beetroot
    • 1/4 cup Peas
    • 1/2 cup mung beans , soaked in water overnight
    • 1 tbsp Pav bhaji masala
    • 1 tsp Cumin seeds
    • 1/2 tbsp Chili powder
    • Salt to taste
    • 2 tsp Kasuri methi (dried fenugreek leaves)
    • 2 tbsp Oil
    • 1 tbsp Ghee , optional
    • 2 tbsp Cilantro , to garnish
    • 1 tbsp Onions, to garnish
    • 1 Lime

    Directions :

    • 1)

      Instant Pot:

      Set the instant pot on sauté mode add 1 tbsp oil into it. Next add cumin seeds  & 2 tsp pav bhaji masala. Now add carrots, beetroots, cauliflower, moong beans, peas & tomatoes. Add salt and give everything a good mix. Next add 2 cups of water. Now press Cancel to turn off the Sauté mode and secure the instant pot with the lid. Set the instant pot on steam function for 7 minutes. When the cooking time is complete, let it naturally release the pressure, once the pressure settles open the lid.

      Pressure cooker

      Heat 1 tbsp oil into pressure cooker. Next add cumin seeds  & 2 tsp pav bhaji masala. Now add carrots, beetroots, cauliflower, moong beans, peas & tomatoes. Add salt and give everything a good mix. Next add 2 cups of water, cover the cooker with the lid. Pressure cook the veggies upto 2 whistles.

      Meanwhile as the pressure is naturally releasing finely chop onions & green bell pepper, set aside.

    • 3)

      Heat 1 tbsp oil to a wok, to it add onions, ginger, garlic & capsicum sauté for 2 minutes. Next add the remaining pav bhaji masala, kasuri methi,salt to taste, add 1/4 cup of water to avoid burning of the masala.

    • 4)

      Next mash the pressure cooked veggies using a masher or you can blend them using a hand blender.

    • 5)

      Add the mashed veggies to the wok, squeeze lime juice and further sauté for 5-7 minutes.

    • 6)

      Garnish with onions & cilantro, add ghee if you like. Serve with toasted bread.

    Notes

    If you are pressed on time you can add frozen cauliflower rice. I get mine from Costco and comes in handy to whip up this recipe.
